I would like to update one of the list names in Klaviyo. However I have several website forms that connect this this site and also some flows. Will those still work if I change the name? Or will I have to go in and reconnect/update the forms and flows to relink to the new list name?

Nope! Changing the name of the list is completely benign. Everything (flows/sign-up forms) will update on their own and will still work as expected.
