And it is working because this is how it looks in one of the customer profiles:
The problem is it not reflecting in tags in Shopify. I have read the guide about syncing and everything is setup correctly, the only thing when I select properites in custom properties, I don’t find “Shopify tags”.
Is this even possible?

Great question, and yes this is possible.
I believe you will be able to achieve your goal by adding a webhook in your flow. Here is more information about webhooks and how to use webhooks can be found here.
