My open rate says 23% (56 recipients) but then below that under the ‘successful deliveries’ heading it says Total opens 213.

How do I know which figure is correct?

Both are correct.

Open rate 56 people is the unique opens, 56 different people opened your email.

Total opens 213 is the total number of the email because some of the 56 people opened the email more than once.

So if one subscriber open the email 5 times, it will count as 1 for open rate in unique opens and it will also count as 5 opens for the total opens stats.
