How can I add a 'send-to' email address to Notification in flow?

I am trying to create a step in my flow where I am notified when someone signs up for my newsletter. When I add the notification step, there is a drop down for the send-to email address- but I can’t add anything in this field and there are no choices available. How do I populate this field?

@mattelustra You can actually type-ahead into the form box and then select the “Add” option when it appears below your typed in email.
