I did come up with a temporary fix. I found when I change the size picker to “drop down” instead of “button”, that fixed it

I would investigate the code in your sizes that are out of stock. It’s possible they aren’t clickable because there might be specific code on your button that is preventing this. For instance, another customer noticed that when they clicked into the backend of an out of stock size/variant, the code showed an disabled="disabled"
attribute on the radio button <input>
where the theme applied when a product is out stock, which rendered it unclickable.
When this code is manually removed it, the out of stock variant was able to be clicked and the "notify me" button showed up!
You will need to connect with your developer to find if this might be the case for your site for a more permanent solution!
