It may be possible to achieve an automatic, recurring CSV export via a third-party tool. I’m not familiar with any such tools myself, so perhaps another Community member can chime in with a recommendation there :)

Within Klaviyo, you can manually Export a CSV of form responses by creating a segment of responders for your specific form(s). Here, you would be able to view the submission date in order to record the number of weekly and monthly responses you received. 

I understand that the above scenario is not exactly the fully-automated solution you are looking for, and so I would also like to point you to this other thread where an API solution was also discussed:

Depending on how tech savvy you are, you could potentially explore the suggestion from the Best Answer in the above thread as well.
