Is there a way I can view email campaign data from a specific time period, instead of just looking at all time? I would like to compare the results of an email sent only a few hours ago with one that was sent a week ago, to predict where this recent one will stand in a weeks' time.

You can use the watch live overview or you can use the engagement over time overview to get a larger picture og performance over time. You can choose which metrics to look into the see when someone engages, clicks or purchases relatively to when the campaign was sent out. In the example below I’m viewing the opens, clicks and conversions. This is available to you in the campaign overview :-)

You can literally watch how a campaign is performing live (while it is sending). Click on the campaign that has been sent. Go to “Watch live” tab and then you can select the metric you want to watch
and then you can select the metric you want to watch. Hover over the dots on the map. This is going to be a little bit manual counting though.
I understand what you are asking, however, I dont think you can select an hourly range to see performance of the campaign, for example, 3 hours after it was sent. let me know if you have any other follow up questions regarding this.
