To “Subscribe one or more profiles” https://developers.klaviyo.com/en/reference/subscribe_profiles I’m not sure whether I can subscribe multiple profiles at once, as suggested by the intro paragraph. The email field simply says string, which seems to imply that it only allows for one profile to be subscribed at a time. Can anyone clarify?

When using the Subscribe Profiles endpoint, you can certainly subscribe multiple profiles at once. In fact, you can submit a maximum of 100 profiles as mentioned in that endpoint description.
In order to subscribe additional profiles, you’ll need to add in additional objects in your calls. You can also see this explained in the Subscribe Profiles endpoint example structure:
