How do I create a segment of people who viewed (but did not purchase) one specific product? What is the segment filtering for this? I already have the viewed product coding on the Shopify store.

You can create a Browse Abandonment flow by following this guide. But for segmenting your customers you can create the segment by What someone has done (or not done) > Viewed Product > at least once > over all time. Then add a filter (you will find this button directly under the definition you are creating for this segment. Add the filter ProductID > Id of the product you want to focus in on.
