I would like to create a Birthday flow but the metric “Birthday” does not show up when I want to create the flow. I have searched a lot and saw that when your first customers enter their birthday the metric should become visible. I already have some customers whose birthday is entered but it still does not show up. Can someone help me?

Probably the first time the Birthday property was created in your account it was created as a text or list item so it is not showing in the setup for flow when you pick date property because Klaviyo is not recognizing it as a date property.
You can always download the data for that property and re-upload with different property name and made sure this new property you are uploading the dates as dates..
