We have an account we’ve used for a client, but we would also like to use it for our own company. We currently use Constant Contact, but would like to move.
Can we have 2 organizations? It appears that we can only have 1.

You are able to create a brand new Klaviyo account that you can swap in-between the two accounts with but correct, you can’t have two organizations structured around a single account or more accurately, you can’t really have two ‘stores’ linked into a single Klaviyo instance.
