I’d like to encourage SMS sign ups and want to send out an email to engaged customers asking them to add their mobile numbers to their profile so we can send consented SMS.
However when I try to add items to the profile sign up the phone number option isn’t there.
Whats the best way to achieve this?

It looks like you are using the signup form builder. The reason you aren’t seeing the field for phone numbers is likely because you are building an email opt in form. However at the top of the signup form builder there is a “+step” button. When you click on that it will allow you select SMS as an option.
This will give you the proper fields to input customers phone numbers. You can delete the email opt-in step by clicking the three dots on the email step, then click delete if you do not want to collect email address at this time.
